Twice Toasted Crabby Cheese Melts

Fresh or frozen crab is best for these savory sweet grilled crab and cheese melts. But any crab will do, because between the buttery rolls and tartness of the cheese, all of the flavors work together beautifully. The most important thing to do with this recipe is be sure the bread is nice and crisp before adding the crab and cheese. This can be messy to eat, but oh so delicious.

  1. Slice croissants or rolls in half and set aside. Preheat the oven to broil. Make sure crab is thoroughly clean including rinsing and drying to make sure it is not too wet or it will make the bread soggy.
  2. Melt half of the butter in a pan. Add the crab to the butter and let it cook until white. Do not overcook or the crab will become chewy.
  3. Melt the other half of the butter in a microwave bowl. Brush butter on the inside only of the sliced bread. Broil until crispy and remove from oven.
  4. Spoon crab from pan onto toasted croissants or rolls. Top with cheese and put back under the broiler until cheese is melted. Serve immediately.
