Vegan Cheddar & Beer Pumpkin Appetizers

These cute little personal cheese balls make a great first impression at fall gatherings. Savory and simple, they are a breeze to whip up and conventional dairy ingredients can be used for a non-vegan version.

  1. Combine all ingredients in a mixer or food processor and mix until combined. Set mixture in the fridge for an hour to harden.
  2. When cheese mixture has set, remove from fridge and scoop out a palm full, carefully forming into a ball a bit larger than a golf ball.
  3. Once formed, set on a plate or serving dish atop a circle of chopped walnuts and insert a pretzel into the top as the pumpkin stem. Garnish with parsley or any leafy green and, if desired, use a small cheese knife to carve vertical lines around the balls to make them look like pumpkins. Serve with pretzels, chips, or crackers at your next fall gathering.
