- Soak cashews and dates overnight or for at least four hours in just enough water to cover them. This will soften them and make them easier to blend.
- Add tofu, almond milk, cashews, dates, salt, vanilla, nutmeg, and cinnamon to a blender and blend on high for several minutes or until there are no bits of cashews or dates remaining. Then add the bourbon or rum (which can be left out if serving to children) and pulse just until combined.
- If a smoother consistency is desired, strain through a cheesecloth or fine mesh strainer and then refrigerate for at least an hour or overnight. Serve chilled topped with more freshly grated nutmeg or cinnamon stick and enjoy!
