In 15 minutes or less, you can have a vegan, non-dairy cheese queso dip for a Mexican themed side dish or party appetizer. Try this for your next fiesta!

- In a pot, boil the carrots and potatoes until very soft, about 7-10 minutes, depending on the size of the cubes. Drain well and transfer to a blender or food processor.
- Add remainder of the ingredients except tomatoes to the food processor or blender and puree until everything comes together in a smooth consistency.
- Transfer queso to a serving bowl and mix in tomatoes, reserving some to sprinkle on top with chives for garnish if desired. Serve warm or at room temperature with tortilla chips.
