Vegan Parmesan Cauliflower Bites

These delicious and healthy cauliflower bites are easy to make and even easier to eat. They make a delicious side dish for an evening meal and a tasty finger food at friendly gatherings. Whip up two batches if you want these nutty, savory bites to last longer than the first quarter at your next football party.

- Preheat the over to 450 degrees.
- Chop or break cauliflower into bite sized pieces the toss in a baking dish with the olive oil, salt, garlic, thyme and basil until the cauliflower is coated.
- In a food processor combine the almonds, cashews, and sunflower seeds (or any combination of nuts and seeds you have on hand) and the nutritional yeast, onion and garlic powder and pulse until a coarse meal is created.
- Add the nut parmesan mixture to the cauliflower and toss again until everything is coated. Place in oven for 25-30 minutes, removing once half way through cooking to stir and rotate the pan. Transfer to a serving dish and enjoy hot!
