Summer and salads go together like the sand and surf. This vegan summer southwestern salad is light, perfect for summertime, and packed full of summer produce like peaches, corn, and so much more. This takes nearly no time to make and is sure to be a crowd pleaser.


Select ingredients:


  1. Prep vegetables, wash lettuce, and place in separate bowls.
  2. Mix mustard, olive oil, and vinegar into mustard vinaigrette.
  3. Add vinaigrette to spring mix. Mix well.
  4. Top dressed spring mix with prepared veggies. Mix lightly.
  5. Serve and enjoy!
