Three ingredients are all thatâ s required for this delightful, fruity pastry. They are perfect for a weekend or holiday brunch, easy to make, and since canned apricots are available year-round, a summery treat any time of year.

Directions

  1. Cut the sheet of puff pastry into quarters so you have four squares. Carefully fold in the edges about ½-inch and pinch off the corners. Dock the center of the pastry with a fork to keep it from rising. Bake according to package directions.
  2. After the puff pasty has been removed from the oven and allowed to cool, distribute the yogurt evenly between the four pastry squares, spooning it into the middle. Then top with the sliced apricot and serve at room temperature.
