This one-pan veggie-fried rice dish blends together the fresh flavors of carrots, peas and onions with fluffy eggs and rice, all generously soaked in soy sauce.

Directions

  1. Cook rice according to directions.
  2. Heat sesame oil in pan on medium. Stir in chopped onions and cook for about 4-5 minutes.
  3. Push onions over to the side and add 2 eggs. Stirring continuously until done. Add in defrosted peas and carrots and stir all together.
  4. Add in rice, soy sauce and stir until all ingredients are well combined.
  5. Top with green onions.
