Vegetable Stock

Homemade stock adds flavor and nutrition to soups, sauces, and gravies, and it's super easy to make. I store it in pint containers in my freezer. Below is a simple recipe, but feel free to add any vegetables you want...it's a great way to clean out your produce drawer when you have vegetables slightly past their prime!

Roughly chop vegetables.

Put all ingredients in a large pot and cover with water. Bring to a boil and then cover and simmer for 45 minutes.

Strain stock into a bowl using a colander, and then pour into freezable containers.
