Sometimes simple fall flavors are the best fall flavors. As tasty as it is easy to make, this vegetable tart will be a delightful appetizer at any autumn gathering.


Select ingredients:


  1. Heat olive oil in a skillet on medium heat. Add onions and carrots and saute until tender, adding garlic one minute before removing from heat.
  2. On a lightly greased sheet pan or tart dish, spread out puff pastry sheet. Spread diced tomatoes across surface like a sauce, leaving a one-inch perimeter. Then add onion and carrot mixture, spinach, grape tomatoes, salt, crushed red pepper, and rosemary on top and fold edges up.
  3. Place in an oven preheated to 400 degrees and bake for 20 minutes, until pastry is golden brown and lightly crispy. Remove from oven and add pepper to taste. Cut into small squares and serve immediately.
