Macaroni and cheese and cheeseburgers are two decadent foods that are oh-so-comforting. Bring them together with this quick and easy Cheeseburger Mac recipe. And besides being delicious, there is another thing that makes this dish stand out – it’s vegetarian! That’s right, the burger meat is plant-based. So, if you’re wanting to serve up a vegetarian entrée for your loved ones who may not be familiar with plant-based proteins, this is a great choice. After all, who doesn’t love a cheesy pasta dish?

- Heat the oil in a large pot over medium heat. Add the plant-based burger patties, salt, pepper and garlic powder and sauté until brown, about 10 minutes, using a wooden spoon to break up the patties into bite-sized pieces.
- Drain any excess grease from the pot and add the broth and tomatoes. Bring to a simmer and add the macaroni. Cook for 15-20 minutes or until the macaroni is tender and most of the liquid has been absorbed.
- Turn the heat to low and add the milk and cheese. Stir until the cheese is melted. Garnish with the parsley and serve immediately.
Recipe Tip: To make this in a slow cooker, brown the patties and add to a slow cooker with the remaining ingredients. Cook on low for 3 hours.
