Vegetarian Collard Greens

Collards are a staple at Southern family meals. These collars are loaded with peppers and flavor.

Ingredients

Directions

  1. Heat a pot on medium heat and add olive oil. Add 1/2 bag of vegetables (or more if you please) to the oil and sweat for about 3 minutes. Add garlic and cook for an additional minute.
  2. Gradually add greens and saute. Once all of the greens are in the pot, add broth to pot. Cook greens until they are tender (about 30 minutes).
