Surprise your dinner guests with this meatloaf recipe made with turkey and fresh vegetables and drizzled with a balsamic glaze.
- Preheat the oven to 425 degrees F.
- Heat the oil in a medium skillet over medium heat, saute the zucchini and bell peppers until soft, about 5-6 minutes. Season with salt and black pepper. Set aside to cool.
- In a large bowl, combine the ground turkey, beef, eggs, grated cheese, bread crumbs, parsley, onion powder, garlic powder, salt, pepper, ketchup, balsamic vinegar, and cooled vegetables. Mix with your hands to combine.
- Gently press the mixture into a 9 x 5 -inch loaf pan. Whisk 1/4 cup balsamic vinegar and 1/4 cup ketchup together. Spoon the mixture over the top of the meatloaf. Bake in the preheated oven for about 1 hour. Rest for 10 minutes before slicing.
