This super easy recipe makes a vegetarian frittata packed with flavorful veggies that anyone will love. We used Nature's Promise Organic products to create an organic, all-natural breakfast dish. Get the recipe!

  1. Preheat oven to 350º. In a 12” oven-safe skillet, heat the oil over medium heat, then add the onions and broccoli. Cook for 5-7 minutes, stirring frequently, until onions are somewhat translucent, then add mushrooms, tomatoes and spinach. Cook over medium heat until all vegetables are crisp-tender, about 5 more minutes.
  2. In the meantime, crack eggs into a bowl and whisk vigorously. Use an immersion blender with a whisk attachment for extra fluffy eggs.
  3. When vegetables are finished cooking, Pour eggs into skillet and stir to incorporate with vegetables. Transfer the skillet to the oven and bake for 20-25 minutes or until a toothpick inserted into the center of the pan comes out clean.
  4. Remove from oven, allow to cool for at least 5 minutes, then top with green onion if desired and serve warm.
