This super easy recipe makes a vegetarian frittata packed with flavorful veggies that anyone will love. We used Nature's Promise Organic products to create an organic, all-natural breakfast dish. Get the recipe!

- Preheat oven to 350º. In a 12” oven-safe skillet, heat the oil over medium heat, then add the onions and broccoli. Cook for 5-7 minutes, stirring frequently, until onions are somewhat translucent, then add mushrooms, tomatoes and spinach. Cook over medium heat until all vegetables are crisp-tender, about 5 more minutes.
- In the meantime, crack eggs into a bowl and whisk vigorously. Use an immersion blender with a whisk attachment for extra fluffy eggs.
- When vegetables are finished cooking, Pour eggs into skillet and stir to incorporate with vegetables. Transfer the skillet to the oven and bake for 20-25 minutes or until a toothpick inserted into the center of the pan comes out clean.
- Remove from oven, allow to cool for at least 5 minutes, then top with green onion if desired and serve warm.
