Versatile Fish Rolls

Serve these as appetizers, or as a delicious, economical, alternative to a lobster roll.

Poach the fish until cooked through.

While the fish is poaching, chop the vegetables.

Place the fish in a bowl and add the vegetables then the seasonings and mix well.

Place a couple of inches of water in a fry pan big enough to hold a rice wrap.
- Heat the water but do not bring to a boil.

You only need to soften the wraps, not cook them.
- Place a wrap into the hot water and let it soften.
- Put several lettuce leaves in the center of the soft rice wrap.

Top with the fish mixture and then close the wrap over it all as you would a small burrito.
