Simple, yet easy, this salad is naturally peppery from the arugula and sweet from the watermelon. This is a perfect side (or main dish for fruit lovers) for a warm day.
- Wash and dry arugula and add to a large bowl. Cut and cube the watermelon and add to the large bowl.
- Dice feta and add to the large bowl.
- Whisk together 2 tbs olive oil, 1 tbs white wine vinegar. Pour dressing over salad and toss gently.
