- In a blender, place the watermelon and blend until smooth. Place in the mixture in the freezer for about an hour.
- Remove from the freezer. Add the coconut milk, the honey, and the vanilla and return to the blender to blend again.
- Pour into tall glasses or jars and garnish with coconut flakes, chocolate chips, or shredded chocolate.
