Wild Rice and Chicken Bowls with Rustic Herbs and Mushrooms

When the weather turns cold home cooks can't help but relish visions of fireplaces, apple cider and hearty meals. This meal is hearty for sure, but it'€™s also a healthful alternative and takes just five steps to prepare. Leftovers are even better after the juices from the chicken and mushrooms have soaked into the rice. The one who gets what'€™s left on the bottom of the pan the next day wins the prize for the most flavorful dinner.



  1. Place butter in pats atop rinsed, seasoned chicken. Add mushrooms and herbs and bake until juicy.
  2. Let chicken rest for 5 minutes and then cut into small cubes or shred.
  3. Prepare rice as directed. In a large bowl, mix mushrooms and chicken, rice, chicken broth and chicken and stir.
  4. Serve while hot and store together in container. For leftovers, stir and reheat together in pan.
