This recipe for Shrimp Fajita Bowls is pretty low-cost to make, as well as flavorful, zesty and made with brown rice for a better-for-you option. Another fantastic thing about this dish is that once you have your brown rice cooked, it takes less than 15 minutes to do the rest. Then, dinner is ready to serve! And here’s a tip – feel free to use cauliflower rice instead to make your fajita bowl low carb.
- In a small bowl, whisk together the salt, pepper, cumin, chili powder and cayenne pepper. Season shrimp with half of the spice mixture, tossing to coat. Heat 1 tablespoon of oil in a large skillet over high heat. Add the shrimp and cook for 1 minute on each side, or until the shrimp just turn opaque. Transfer the shrimp to a plate and set aside.
- Add the remaining tablespoon of oil to the skillet and add the red onion and bell peppers. Season with the remaining spice mixture and sauté, stirring frequently until peppers just begin to soften and brown around the edges. Return the shrimp to the skillet and cook for 2 minutes. Squeeze lime juice over the shrimp and vegetables.
- Spoon the shrimp and vegetables over the brown rice. Garnish with sliced avocado, Pico de Gallo, fresh cilantro and lime wedges.
