Delicious corn bread and a great way to use excess zucchini. Goes well with other summer vegetables for a hearty, healthy meal.
- Mix squash, onion, corn meal and cheese. Beat eggs, milk, sour cream and salt together and mix with dry ingredients. Pour into a 9 x 13 pan sprayed with cooking spray.
- Pour melted butter over the top. Bake at 375 degrees for 35 - 40 minutes. Cut into squares and serve hot. Also good warmed over. It actually freezes well for future use.
