Directions

  1. In a medium bowl combine flour, sugar and baking powder.
  2. Squeeze grated zucchini in a paper towel to get rid of excess water.
  3. Add zucchini, carrot, egg, butter and milk to flour mixture and combine evenly.
  4. In a non-stick skillet cook pancakes flipping once until both sides are golden brown.
